RECIPES FROM 06/02/18

 

I love burgers. Specifically, I love bacon and blue cheese burgers. I order them all the time, always in search of the Best Blue Cheese and Bacon Burger of ALL TIME! Sadly, I’ve never found one that really gets my motor running. So I decided to take all the things I’d want to see in a burger and just do it. This is the result. The combo of beef and pork, the bacon and the blue cheese make a very rich burger and you can dial in the heat as you see fit with the jalapenos and chipotle mayo. If chipotle isn’t your thing, maybe try this with regular mayonnaise and steak sauce. That’s pretty great too.  We put a side of sweet potato fries with this bad-boy and then washed it down with 5Rabbit’s Yodo Con Leche. A burger like this calls for a dark beer and the Yodo, an Imperial Porter with caramel and coffee undertones, really hit the spot.

Pappa’s Spicy/Savory Blue Cheese and Bacon Burgers

This Savory Burger brings a little heat and a lot of flavor.

Ingredients

  • 1 lb bacon
  • 1/2 large onion finely diced
  • ½ c crumbled blue cheese
  • 1 block blue cheese thinly sliced
  • 1 med jalepeño finely diced
  • Chili Powder to taste approximately 1 tbsp
  • 1 tbsp garlic powder
  • bread crumbs as needed to firm
  • 2 large egg lightly beaten
  • 1 tablespoon dried parsley flakes
  • Salt & Pepper to taste
  • 1 pound ground beef
  • 1 pound ground pork
  • Brioche hamburger buns split and toasted

Instructions

  1. Cook bacon to desired crispiness.  

  2. Mix bread crumbs, egg, onion, parsley, salt, pepper, jalepeño, chili and garlic powders, crumbled blue cheese, beef and pork well.

  3. Shape into 1-in. thick patties.

  4. Pan fry in cast iron skillet, uncovered, over medium-hot heat for 4-5 minutes 

  5. Flip and place bacon and sliced blue cheese on burger. Cook, covered over medium heat for 4-5 minutes.

  6. Serve on brioche buns with chipotle aioli

Recipe Notes

Alternatively, you can grind your beef and pork fresh (same quantities)  using a meat grinder and grill this over open flame.
