It’s good to be back!! I was super pleased with how this came out. I found this idea a few weeks ago online and I had been tweeking the recipe in my mind for a bit. This looked and tasted great and I’d LOVE to see what you guys can do with it.
This actually, even with the chipotle and deep frying, turned out to be a pretty light and flavorful dish. Paired it with a nice junmai sake from Sake One: Sakemoto. Great all around.
Tempura Shrimp Tacos
Spicy and Sweet, this dish isn't necessarily an easy one to make, but definitely worth it!
- 3/4 c cornstarch.
- 1 cup flour.
- 1 tsp baking powder.
- salt and pepper
- 1/2 c water. ice cold!
- 2 med egg slightly beaten.
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1-2 qt vegetable oil heated to 350°+
- 1 lb 16-20 shrimp peeled and deveined
- 2 tbsp diced jalepeno
- 1/2 avacado sliced lengthwise
Crack eggs into large bowl. Add water and whisk.
Mix all dried goods and separate half out.
Add one have of dried ingredients to liquids. Do not whisk together! Use whisk to simply submerge dried ingredients into liquids. Lumps are ok.
Dredge shrimp through dried ingredient and coat with batter. Carefully place in hot and let cook for approximately 3 minutes or until they're a deep golden color.
Remove tails and rough chop shrimp into large chunks.
Add to soft flour tortillas with liberal amount of Simple Asian Slaw, Honey-Scotch Chipotle Aïoli, jalapenos, and avacados.

Honey-Scotch Chipotle Aïoli
- 1/4 c honey
- 1/4 c good scotch (I prefer Glenmorangie Lasanta)
- 2 tbsp chipotle sauce
- 1/2 c mayo
put honey and scotch in small pan. stir and bring to boil. Reduce to light simmer for approximately 5 minutes.
While honey-scotch is simmering, mix mayo and chipotle sauce in med bowl.
Let honey-scotch cool in fridge.
Mix all ingredients together and pour into squeeze bottle for later use. Keep refrigerated.
Simple Asian Slaw
A great addition to a variety of different main dishes.
- 1 c purple cabbage thin julienne cut
- 1 c green cabbage thin julienne cut
- 2 tbsp sugar
- 2 tbsp olive oil
- 2 tbsp soy sauce
- salt n pepper to taste
mix all ingredients in medium bowl.
